Once I was trying to adjust hydrolysate of seaweed to pH 5, I kept observing that the color of hydrolysate changes from brown-red to dark brown or black once pH reaches to 5 or above, anybody have any idea what may lead to this phenomena?

Due to antioxidants activity , hydrolysis efficiency and polyphenols, not only pH changes, also temperature changes affect color
