I'm sure that the value of the function falls into the ranges of x, y and z
Your command works fine in the latest version, R2014b. What version of Matlab/MuPAD are you using (type version into your command window)? The Symbolic Math toolbox gained many new features starting with R2012a. In particular, R2012a gained relational operators and assumptions on variables:

Other functions in the toolbox were likely updated to use these in this and subsequent releases.
Also, if you are using an older version, be wary of what you come across in Google searches as The MathWorks posts the documentation for the latest release.
