So I'm running an explanatory sequential mixed methods study and I want to use thematic analysis. Only thing is I'm struggling to find any papers with guidance on which type, I have considered codebook ta due the the fact that I already have some idea of what themes will come up due to my stage 1 quant however I also like the idea of using relflexive ta to give a more in depth description and not assume what my participants want to say to me...any advice?
Given that you have strong set of pre-determined ideas from your earlier quantitative work, I would not recommend reflexive thematic analysis, which is a purely inductive approach. Instead, you might you might use a "hybrid" version of content analysis that begins with a deductive set of prior codes and then adds to that in an inductive fashion during the analysis. A useful citation is:

Braun & Clarke's were version of thematic analysis actually includes a third "intermediate" version between purely inductive and purely deductive, but they don't really have that much to say about it.

Since your study is explanatory sequential mixed methods research (QUAN —> qual), you could go for directed content analysis (DCA) (Hsieh & Shannon, 2005). In DCA, coding is guided by quantitative findings. You might refer to Hsieh and Shannon (2005) for practical guidance. As a side note, you could accelerate your mixed methods study with natural language processing (see Chang et al., 2021).

Whilst I have you guys, I have a problem with deciding on data saturation for my interviews...I am transcribing as I go but can't keep up with the interview schedule so how do I decide when the themes are saturated so I can stop interviewing? I'm aware there's been much discussion lately on the process of saturation and what types there are...
My opinion is that you should recognize be able to saturation during the interview process. For me, this goes beyond simply finishing with the sense that I have not heard anything new. In addition, during the interview, you should feel that you can almost predict what the person is going to say next, so that you not only have "heard it all," but also have a strong sense of how it all "fits together."
This version probably comes close to "theoretical saturation," but for that you really need to be doing coding during your data collection.
