Petra, I have little experience, as I just get the DEM's from our geographical survey. But there are several photogrammetric programs available, but I have never used them.
If you have a stereo pair, I'd say that you have aerial photos, not ortophotos. Ortophotos are created by correcting the terrain distortions on aerial photos.
Creating a DEM from aerial photos is not as simple as we wish. First, remember that only the area where the photos overlap can be reconstructed.
Commercial software like PCI Geomatics or ENVI offer that functionality. Agisoft Photoscan is made for Structure-from-Motion, not tradicional photogrammetry, but is very good and not expensive. There is a software called OpenSfM that is open-source and Free, but I never tested it (it's Windows-only and I run OS X).
The e-foto project is about an open-source photogrammetric station for Windows and Linux. This might be a good starting point for you.
