i have used Sarsacpe for a long time and now since THREE year using Sarproz . in addition to above feature listed I would like to add the merit of Sarproz software as following.
Additional advance features:
1.Automatic data type identification and reading (Only need to specify the folder)
2.Customized subset selection through GUI (Google earth interface no confusion about SAR coordinate and location)
3.Easy processing of Time Series data (several function in time Series module and Multi-sensor result integration)
4.Smart processing for quick result generation ( Single window interface for all processing)
5.Multiple custom defined PS selection method (based on multiple parameter and threshold)
6.All polarimetry data processing, import of different pol/dual/quad pol data processing etc.
7.Automatic update for additional images in time series (easy way for continues operational monitoring )
8.Automatic SRTM, Precise orbit file and weather data download

I have been working with Sarscape and Sarproz from an year. Both the software are pretty good for PS processing.
I feel Sarproz is more capable, in terms of ease of usage and advanced processing. It provides lot of options for PS selection and time series analysis.
Within India, technical support of the Sarproz is good and on the online forum the developers of the software respond in no time. It is getting better everyday with inclusion of new features and bug fixes.
On the other hand, Sarscape provides both PS and SBAS analysis. As far as I know, PS selection criteria is limited in this tool. As already mentioned, visualization and any kind of GIS analysis through ENVI is an advantage for Sarscape.
SARPROZ is a conveninet and user-friendly software. There are different options for Atmospheric Phase delay estimation. There is also an option for amplitude-based time series analysis. This software is easy to explore and advantageous to use.
I have used both software's for DInSAR process not for PSInSAR.
But, I more satisfied with SARPROZ only. Because, from SARPROZ supporters you can get answers immediately for your problems and they will update Pcodes continuously if they found any bugs.
Sarproz is a versatile, fast and reliable software. The main strengths are the possibility to estimate a very reliable atmospheric phase screen.
The coregistrator is adaptable, fast and programmable because it is possibile to select anchor Points using different strategies, all this is very for subsidence estimation and mapping based on pixel tracking.
The multi image sparse processor (MISP) Module allows to carry out very very reliable 4D SAR Reconstructons!
