I am confused about some things:
1. where should i do my switching, at the start or at the end of the bridge?
2. how much my ADC settling time should be in order to get exact data?
3, which parameters should i take into account during designing of an oscillating circuit for AC Bridge circuit?
4, I also want to integrate a digital potentiometer for the bridge but i have no idea about it. Is it complicated to control those digital potentiometers with labview via i2c or spi? if yes then what could be the alternative for this?

You can find it in the ADC specifications, but the opamp must be at least 5 times faster than the ADC. The strain gauges are faster than the opamp and the ADC

Be careful with temperature dependence of all the components used as long as strain gauges modified its value a very low percentage

If you want to use SPI or I2C with labview I recommend you using FTDI USB converters that are very reliable, compatible with labview at a reasonable price as you can see in the attached link
