We want a gyroscope accelerometer sensor that can work with Arduino microcontroller but our requirement is to transfer the data without serial port because we want to import it to MATLAB and further process it through machine learning so what would be the required sensor and microcontroller for it?

Which serie protocol ?
Because, you can use CAN protocol but not really use for this kind of application. SPI or i2C could be the best solution.
Most gyro can be read by SPl and I2C.
If you use mcu, without this peripherals, you can use gpio to develop this peripherals. But I recommend you to use pic24 mcu family. This family has graphical wizard for peripherals (mcc).
Matlab can communicates with parallel port, serial port and USB port. So you can use a MCU such as AVR, ARM, PIC and arduino or larger systems such as jetson nano.
It depends:
1. If you wish to use wire then serial (RS232) -> usb converter -> computer -> serial virtual com port -> matlab is the easiest. It would be better if you have microcontroller with USB in it (so you dont have to convert it with additional hardware)
2. If you wish to use wireless then you may use solution such as nodemcu that is low cost and easily integrated to Wifi
