I am looking for a Toolbox or a tool to analyze Multispectral fruit/vegetable images (acquired at different wavelengths using filters), which is having good features along with neat documentation.
Which is the best open source toolbox compatible with Matlab for analyzing Multispectral/HSI Images?
I'm using with IDL ENVi sw since 2000 and it is perfect for multispectral and hyper analysis

The PLS + MIA Tooboxes from http://www.eigenvector.com/ are Matlab toolboxes you need. It is very simple to use with a nice GUI.

HSpeQ LLC (www.idcubes.com) offers a free hyperspectral imaging software IDCube Lite that does most of the functions that your are looking for.
