As you know Enteric Redmouth Disease could be considered as one of more important bacterial diseases in Coldwater fish.
In this regard, environmental parameters should be noticed more than other factors in initiation of mentioned disease in affected farms.

Environmental parameters as causative agents in occurence of ERM disease in rainbow trout including: water temperature, crowding, excess ammonia, low oxygen, obesity, and handling stresses are important factors that inference the timing and severity of epizootics (Rucker 1966). Since these factors can be controlled by fish culturists, the disease can be managed by maintaining good environmental conditions (DuIin et al 1976; McDaniel 1971). Stress from handling can trigger outbreaks of ERM, especially if water temperatures exceed 13°C (Dulin et al. 1976; Busch and Lingg 1975). At these temperatures rainbow trout grow rapidly, oxygen demands are high, and economics losses due to ERM will often be high among large fish (Dulin et al 1976).

The water quality parameters are all important and inseparable, which is more important. But it seems to be more important than water temperature.
Enteric Red mouth Disease is considered o be a bacterial disease in Coldwater fish. they proliferate in an unhygienic environment. So the environmental parameters in this case will be excess ammonia stemming from accumulation of much organic substrates in the water with attendant low oxygen availability. .
Homeostasis is for sure crucial and multifactorial and a number of perturbations (stress) could affect it. To spare time and money, as I guess you'd hope for, I would consider at first low oxygen and excess nitrates (both affect immune reponsiveness). Check papers on european sea bass and maybe gilthead seabream. All the best
According research works especially the one by Zorrehzahra et al. (2012), low quality water that has high temperature, excess ammonia, marginal carbon dioxide, with hydrogen sulphide and that is acidic in nature is responsible for this infection.
