I am looking for a dye that dissolves in water but not in oil and absorbs light around 355nm. Heat should be created and it should not fluoresce. Do you have any suggestions? It should avoid oil but dissolve in water! It can also absorb visible light but should be quite transparent for red light.

I think some azodye with a sulfogroup could be a solution. Under irradiation trans-cis isomerization happens followed by heat emission. However I do not know anything about their NIR spectra. Perhaps also you can look at the Freinga's molecular switches for other systems.
