The three main categories of enzymes which are responsible for digestion of the principal food components are:
1- Proteases for protein.
2- Lipases for lipids.
3- Amylases for carbohydrates.
You can choose any single member of one category with others from other categories. However, you can focus on specific enzymes according to the food habits of your fish. Predatory or carnivorous fish mainly consume protein rich diets, so the primary working enzymes are proteases. In contrast, plant eating fish or herbivorous mainly consume carbohydrate rich plant materials, so the most active enzymes will be amylases. The same is applicable for lipases according to fat proportion in food. The final options will depend on the ultimate goal of research; nutrition, physiology or growth for example, to choose any specific enzyme to study.
