Very interesting question. In phytochemistry solvents or water is used, but possibly in traditional medicine systems honey is used though I am not aware of any specific plants or products thus obtained. I am also interested to know about this process.
Most of researchers uses polar to non-polar rage of solvents for the extraction of chemical constituents, honey !! I heard it forthe first time.
In Ayurveda some medicinal herbs are used to prescribe with honey to enhance their activity, honey itself having lot of medicinal value, Besides carbohydrates, honey contains small amounts of protein, enzymes, vitamins and minerals.
I think it is nothing but a sugar syrup, so chemicals that dissolve in water might come out with honey, when you go for extraction of plants
Eg: Acids, alcohols and simple amine
(Above answer is just my assumption, I might be wrong)
