We know that milk fat is composed of triacylglycerols (TAG) with a certain range of fatty acids distributed in different sn-positions. The FA profile with the usual stereospecific positions is known, but what I would like to know are the most common TAG found in milk, but with the position of each acyl chain within each TAG determined. Is anyone aqcuainted with such work?
