There is a bit (but not country by country) on the UN trafficking web-site (https://www.unodc.org/unodc/human-trafficking/) in the publications section. Esp. Global Report in Trafficking in Persons (but you probably know that already). Other than that, I don't think that there is any comprehensive data collection.

For Germany where I come from, the Bundeskriminalamt (Federal Police Agency) provides annual reports on trafficking in persons - but only police data. The English language versions can be found here: https://www.bka.de/EN/CurrentInformation/AnnualReports/TraffickingInHumanBeiings/traffickinginhumanbeiings_node.html

Unfortunately, there is no similar data collection for court statistics, the data is in the annual general court statistics which can be found here: https://www.destatis.de/DE/Publikationen/Thematisch/Rechtspflege/StrafverfolgungVollzug/Strafverfolgung.html. These reports are only available in German, though (relevant ss. of the Criminal Code: 232 - trafficking for sexual exploitation, 233 - trafficking for labour exploitation, 236 - child trafficking).

I know that this isn't want you wanted to know, but maybe you get answers like mine from other countries and can start a database yourself? That would be really great.

As an ambassador with Shared Hope International, I know they keep statistics on some countries www.sharedhope.org or contact Polaris where they have a national hotline U.S. www.Polaris.com otherwise good luck In my research I look for the national police in that country and email them to see if they have any data. Most do not that's why it is hard to find hard data. The two above will point you in the right direction for minimal data.
