Currently I'm on the CFD simulation of a high speed rotating fluid, it's air by the way. It's important to me the way the energy change through the flow and I'm not sure about the Cp, I'm using Kinetic Theory from Fluent, Would I expect this to be a good choice? Where can I find some related info?

The only significant change in gas properties that I can think of associated with high swirl/rotation is the pressure profile. The heat capacity of nearly all gases is essentially independent of pressure except under extreme conditions or near a critical point.
Heat capacity of a certain gas is a function of temperature, pressure and composition. You can learn more about the effect of these parameters on heat capacity through reading "Introduction to Chemical Engineering Thermodynamics" .
As Prof. Baxter said, heat capacity can be a weak function of pressure except in the case of extreme or near critical pressures but it is a very strong function of temperature.

It must be noted that if you are dealing with air as an ideal gas their energetic properties are only functions of temperature (not for entropy). As the previous comments say, even if you are dealing with a "real gas" it is not expected to its c_p be a strong function of pressure, besides of temperature, while you are positioned far from the critical point. Besides, mechanical effects, such as rotation, do not affect thermophysical properties (except, of course, if at high rotational speeds, due to the high pressure gradients it imposes to the rotating fluid).
