Sucrose stearate is not an acid. It is an ester. So you cannot titrate it with NaOH or KOH. Instead, do a back titration. Add an excess amount of ethanolic NaOH or KOH. Reflux. Then titrate the remaining base with an acid (HCl).

Is it possible to do standard reaction if i want to know the conversion of fatty acid to the ester in this esterification process?

In that case you can titrate it with ethanolic KOH to determine the remaining fatty acid in the reaction mixture. If you still unclear can email me [email protected].
