What tests can be done during fungal fermentation to keep a check?

While doing fermentation of any gungal strain, what other check points can be kept for example growth curve, reducing sugar, growth density.,etc.

Thank you ajay for ur kind response. but I am performing this experiment at flask level fermentation, so how can I keep a check on DO in flasks?
