There are a bunch of other chemicals that can be used to measure peroxidase activity.
I would cite two that we use frequently instead of guaiacol or pyrogallol.
These are tetramehtlbenzidine (which by reacting with peroxides yields a charge transfer complex absorbing at 650 nm) and 4-aminoantipyrene taht by reacting with peroxides yields an oxidized derivative whcih absorbs light specifically at 510 nm.
You can calibrate your tests with H2O2.

Peroxidase enzymatic activity can be measured using pyrogallol and hydrogen peroxide as substrates. A spectrophotometer is used for the reaction product (purpurgallin) detection at 420 nm.
