There is no pressing need to plasticize cellophane since it does not come out rigid when it is formed. We plasticize P.V.C, for instance, because it comes out as inflexible product when it is made from its monomer.
In the attached link, the company uses cellophane ,without any plasticizer, for packaging cheese. I think they are doing a fine job.
Since the aim of research is what you mentioned, then I recommend trying adipates (such as dibutyl adipate or dioctyl adipate) or sebacates (such as dibutyl sebacate or dioctyl sebacate). I do not recommend the famous aromatic compound D.O.P "dioctyl phthalate" because it brought problems to a PVC industrial plant here some years ago.
