Is 10 m resolution proper for gully erosion susceptibility assessment?
What features have the most importance in these studies? I think of lithology, land use, soil texture, altitude, slope degree, slope aspect, river, and road.

If I were you, I would try all pixel sizes, and find out which one/ones is the most suitable ones for each individual feature; see my discussion on this topic of scale:

The resolution depends on the scale you study. 10 m is good resolution and you can visually identify some gullies from the images.
Its better to use some statiatical analysis like multiple logistic regression or any bivariate analysis techniques like weight of evidence or infoval for determindeterminingne the importance or role of factors used in the analysis. I think you need to use more parameters like curvature, twi etc. Channel head locations are also important.

The suitable resolution depends upon the minimum width of gullies that you want to extract in your case study. 10 m is suitable for gullies including 20 to 40 m width.
The second question divides into two categories: 1) parameters influencing on erosion, and 2) parameters about geometry of adjacent features around gullies.
So, the suitable resolution also depends on the width of adjacent features around gullies. The number of parameters is great. Please, simplify your problem and then select a proper image.
With a resolution of 10 m numerous gullies inerior size they are very important in the process of erosion escaped. Furthermore, although there are many factors that may be involved, I think lithology, land and slopes, are the most relevant.
You need a pixel size that is smaller than the scale at which processes operate in your landscape - see the attached link.

Also, you need to define a maximum width of gullies in your case study. It is important to decrease commision error. For example, I used maximum and minimum size of building units in my research study.
