I think there is no simple answer to your question. From my perspective there is different variables that you should consider in order to chose the best physiological measures. For example, if you are including women in your study, research has shown that electrodermal activity allows researchers to better understand physiological reactions in this group. In general, when using physiological measures, you also have to take into consideration variables that might play a role (e.g., medication) and how sensitive is your measure to these confounding variables.

It depends on the design of your task. If you have a stress condition and you want to compare it to the control condition, you can use cortisol. On the other hand, if you have a design with different trials of shorter stressful/control events, cortisol won't help you much as it takes time (25-30 min) to rise and come back to baseline. Skin conductance response/level might be then more helpful.

Blood pressure measures are also a good idea.
