For imaging organoids, 40XO objectives should serve you better. While the 60X objective provides you with better magnification, you lose information as the organoid might not fit in the field of view (unless you are interested in a part of it). Even 20X can be useful for some organoids of bigger dimensions. So for publication purposes, choose between 20X and 40X (for full view; optimize the dwell time and pixel size to improve image quality) and you can always come up with a magnified view with 60X.
