u need to conduct a face to face semi structured interview with each s. after recording and transcribing your data u can analyze data using thematic or content analysis. then report your findings qualitatively and quantitatively(percentage, frequency). i recommend books by dorniye. happy research.

Also, I always analyzed interviews with a qualitative approach. In this project, I want to use interviews to assess their knowledge in a particular context instead of a written exam or questionnaire.
Jean-Philippe, here are a couple that might be helpful. I find that "think-aloud protocols" are helpful to keep children on track in the direction you are interested in. Here is one example- you will need to dig into the methods:

A interesting starting point would be the papers describing the development of the concept inventories in diverse domains (biology, physics, etc.). The vast majority uses interviews, e.g.
