We are testing the starch hydrolysis of ground wheat grains and also another substrate. Ground wheat grain is supposed to be positive control here. The enzyme blends we used were Fermgen, Optimash, Stargen. Temperature of incubation is 55 degree. Time period is 72h. However, we see a 50% hydrolysis efficiency of wheat as maximum at 12h and then it keeps constant. Can anyone tells me 1. What is the normal hydrolysis efficiency of ground wheat in industry using STARGEN enzyme? 2. If the Fermgen (protease) inhibits the STARGEN when those two enzymes were mixed tougher to add into wheat mash?
