I want to know exactly what happens when lecithin is oxidized. In the method I follow I use cupric acetate which initiates the oxidation. But I want to know what are the changes that takes place when lecithin gets oxidized and also whether liposome is present combined with the lecithin or it is formed after oxidation of lecithin. Please explain. Please provide if there is any relevant reference.
Antioxidant activities are determined in a copper-catalyzed lecithin liposome oxidation assay and analyzed for their phenolic contents.Lecithin-liposomes are suitable model systems in which to test the antioxidant activity of the polar hydrophilic phenolic compounds found in grape extracts. It is also used for antioxidant activity of flavones from Scutellaria baicalensis in lecithin liposomes.a β-carotene-linoleate model system.
