What is the mechanism/role of water in condensation (removal of water) reactions?

If the condensation reactions are done in organic solvents, trace of water affect the rate of the reaction and yields. However, if the condensation reactions are done in water, water do not affect the rate of reaction and yields.

Can anybody help me to know the reason for this with good reference?

Mr. Suresh, Most of the toluene is found suitable solvent for the dehydration kinds of reactions and use of dean-stark assembly is preferred. But can you please send me the reference where condensation is carried out in water?
