How can Congo red dye stain cellulose fiber? What are the interactions between the dye and fiber?
Hi! Maybe interactions of the amine groups of the dye and of the most accesible OH group of the cellulose?
Mainly due to stacking of dye aromatics with the hydrophobic sugar planes of cellulose. Also, there should be hydrogen bonds as pointed out by Jon Trifol. Check the article cited below

I think the hydrophobic interaction may be the main force and pH doesn't affect the binding of the dye.
Yes, I found HCL and NaoH didn't release any dye from binding.
