Currently, liposomes are synthesized using lipid-coated beads. To make lipid-coated beads, lipid powder is initially dissolved in methanol containing rhamnose and glass beads. I am wondering about the function of the rhamnose, is it related to the coating ability of lipid on the beads?

To get an idea why this method is used I advise you to read the following two papers. According to the first paper:
Blanken, D., van Nies, P., & Danelon, C. (2019). Quantitative imaging of gene-expressing liposomes reveals rare favorable phenotypes. Physical Biology, 16(4), 045002 (see enclosed file)
it is because and I quote “The addition of the hydrophilic sugar rhamnose to the lipid film, combined with the presence of PEG modified lipids, promotes separation of adjacent bilayers and formation of unilamellar vesicles”
According to the second paper:
Kanta Tsumoto, Hideki Matsuo, Masahiro Tomita, Tetsuro Yoshimura, Efficient formation of giant liposomes through the gentle hydration of phosphatidylcholine films doped with sugar, Colloids and Surfaces B: Biointerfaces, Volume 68, Issue 1, 2009, Pages 98-105 (see enclosed file)
it has to do with and I quote “This observation indicates that giant unilamellar vesicles (GUVs) of DOPC can be obtained efficiently through the gentle hydration of sugar-containing lipid dry films because repulsion between lipid lamellae is enhanced by the osmosis induced by dissolved sugar.”
