I attach you these two plots of VLE. In the one I use only the UNIQUAC model to describe the Vapor Liquid Equilibrium and in the other one I use the combination of UNIQUAC-HOC to describe the Vapor-Liquid Equilibrium in ASPEN PLUS. And I can notice that the second model is the most suitable because it takes into account the dimerization of acetic acid in the vapor phase. But I cannot really understand this dimerization how affects the composition in the vapor phase.

You have found an application where the HOC model is clearly superior to Uniquac. This is presumably related to dimerization of the acetic acid mixture and the fact that dimers boil at higher temperatures than monomers.
Unfortunately usually the answer to question like this is that "we use this EOS because it works better in this situation" presumably because it correctly modeled interactions that other models ignore. In this case dimerization

UNIQUAC is not able to handle electrolyte systems in an accurate way. If you have charged species in your system, you should use UNIQUAC-HOC or other electrolyte models, e.g. E-NRTL.
