Greetings all

As you might know raw milk has an alkaline phosphatase activity, and indeed this activity is used for pasteurization quality control.

The question I am wondering about is, what is the biological role of this enzyme in the milk? Especially since milk pH is lightly acidic, suggesting this enzyme will not be very active...
