What statistical model would be best for analyzing paired dichotomous and trichotomous independent variables (i.e, gender and test performance [high, middle, low] predictability on trichotomous such as a high stakes assessment (high, middle, low)?

If your data has dependent variable whose ordinal or nominal , I recommend you to use logistic models

You might consider naive Bayes classifier or perhaps Bayesian networks.
