I've been looking at things such as Prezi and PowToon, but is there anything else that is interesting or fun to use that I've missed?
Some people claim that Beamer (a class for LaTeX) is very good and easy to learn.
But you have to be familiar with LaTeX itself and have it running on your system

Prezi is a very good tool. If you have to do a scientific presentation with some formulas or calculation you can create a slide Show with Mathematica.

There's one new great tool that I'm using recently to build my research figures and presentations, it's very easy to use and it has a gorgeous cientific illustrations database, you should give it a try:
