Perhaps this LSE blog that I'm editing may be of some interest. It puts together various experiences in addressing field research constraints, and many contributors engage with ethnography: Field Research Method Lab blog at LSE, http://blogs.lse.ac.uk/fieldresearch
Since you lost Visual Ethnography as one of your areas, I would suggest looking at how ethnographic films depict. ethnography. Some of these have supplemental materials.
Many authors have now written about fieldwork as collaborative. See Georges and Jone (an older work) but very revealing.
I recently published an ethnography of scrappers (metal recycles) and metal thieves (e.g., copper theft), using ethnographic methods. It's available in PDF through Amazon and the publisher.

Thanks Ben, I'll definitely have a look at that. I remember watching a documentary on 'scrap men' not too long ago.
