In the literature you may find different articles related to the extraction of lycopene from both tomato paste and peels. Authors suggest to apply "green" solvents for extracting it, which have also higher yields with respect to the most commonly used hexane-acetone-ethanol (50%-25%-25%). One of the most used is ethyl acetate.
