I'm a big fan of plastic versus paraffin for such a study because you can cut the sections much thinner if embedded in plastic than paraffin, which gives much better morphological images. With LR white, you can get 0.5 micron sections which stain well with Toluidine Blue stains. The other plastics, such as JB4, Tecnovit, MBM, etc., easily section at 1 or 3 microns which can still be used if you want H+E staining or other 'standard paraffin staining method.'

Another advantage of embedding into plastic is that the fine roots will be obvious. In paraffin, the roots are hard to find in the opaque medium. The polymerised plastics are clear and so the roots will be obvious.
