What is the accurate way to find the central tendency for Likert Scale Data?

I asked three raters to evaluate the creativity of stories. Each gave ratings on 7 point Likert scales for two measures of creativity: Originality and Practicality.

Now, I want to use a representative value for originality and practicality for each story. What is the best best way to find the central tendency for likert scale data?

Please also add references if you know.
