I'm doing research in ethical product preference for my final year.
I ask my respondents to select any number of options they liked from a set consisted of 30 choices, say participant A had 10 choices in their new set then only obliged to rank those ten. While participant B had 15 choices in their new set and rank them.
How do I wrote the other rank-less choices in my data set, given that it may vary between every case/participants?

If i understand your question i will create a variabel with 2 categories: 1 the 10 best choices (=rank better choices) , 2 the other 20 choices (=rank less choices); and then you could analyse separatelly or i could compare those 2 groups of choices.
ex: for each group you analyse their frequency, the most choosen choices, ...the less choosen; you could also see the associations between the 2 groups, where are the strongest relationships....
To help you to cjoise the best way to treat your variables we need to know more on how you will use them.
On the basis of your note, if I understand well, I think you have three different information to manage: (i) which are/how much are options selected (in general and/or for each respondent), (ii) which are the option more selected and (iii) which is the avarage rank each option receives.
If it is so, you do not need to recode the options not selected by respondents.
I believe you need to categorize each single one of the 30 items and enter them in the analysis as YES/NO (Selected/Not selected)....
Helena's Response seems on target in my eyes. Yes, I would show their relevance to the first/existing choices given, by giving them the added dimension of being a more refined choice (i.e.,e.g., better choice, less choice). The bit point here is to discuss what you did, why you did it in the discussion section. This type of research refines itself as one sees what the respondents are thinking... as they choose or not choose, and offer differing ways of looking at your problem/research. This is the situation with research such as this... open to discussion, and not as clear cut as we would like. That is why it is so important to attend to these idiosyncrasies in your discussion section.
