In what tissue are you measuring these enzymes? I have measured them in isolated islets, but not RBCs . I think if they are measuring in RBCs they might normalize to hemoglobin, but I am unsure without seeing the reference you are quoting.
In that case, normalization to Hb may be reasonable.I used the method from Current Protocols in Toxicology in which protein determinations from cell extracts are used to create a dilution curve and this is compared to the standard dilution curve. The assay is based on % inhibition of xanthine oxidase. My results were pretty variable: 66-85 U/mg protein with a range from 20-120 depending on the islet prep.
