I'm looking for a good quality, WoS or Scopus journals that took a relatively short time for acceptance and publication in the field of health informatics and multidisciplinary journals as well.

Yep, IJMI now claims three months to final decision - and that is something I do call "FAST" - https://journalinsights.elsevier.com/journals/1386-5056/review_speed .
Now as colleague asks for "a good quality", I would definitely not recommend journals as "Acta Medica Informatica" - it is in the 74th percentile in Scopus and does not posses JCR IF... The institutional policies in my country do not see such a journal as a valuable one.
JMIR is very efficient, however it would always depend on reviewers' feedback and how quick the author is in addressing the comments and resubmitting...etc They also have a pretty high impact factor for some of their publications https://jmirpublications.com/
For the time of first decision and revision, check each of those journals' website. They may provide an estimate. Other than that, you can use journal finder tools like Elsevier's. Simply copy and paste your abstract and it will suggest you most suitable journals. In that list, it will also provide timeline for first decision and reviews, and acceptance rate:
