There is so many software regarding RS and GIS i.e ArcGIS, Erdas Imagine, Envi etc. I will recommend you to use Arcgis and Erdas imagine.
QGIS - good.
Other free software are SAGA GIS and GRASS GIS, but QGIS integrates their tools.

The answer to part 1 of your question is already given. You may use ArcGIS, QGIS, ERDAS IMAGINE, ILWIS, GRASS depending on your requirement.
For part 2 :
Remote Sensing: "Acquiring information about any object without being in physical contact with it". The best example of remote sensing is Human Eye. You see a person and get to know that he is tall. You don’t touch him physically and you acquired some information about him.
A geographic information system (GIS) is a system designed to capture, store, manipulate, analyze, manage, and present spatial or geographic data.
