It is not my field, but it is related to the meshing structure. All mesh has a topology (geometric and mathematical). Each part (the element) has some connections with its neighbors and change some information. Each element is a kind of oriented graph.
This structure will define the matrix structure and its conditioning, and all things related to linear system solutions, such as convergence rate, Eigenvalues, and vectors, the stability of the solution, etc.
I never have studied such thing before, but I know that there is this correlation.

Well, the role of graph theory in fluid dynamics comes into the picture when you study the fluid flow in some structures for examples honeycomb-like structure, tree structures, web structure etc. At a larger scale, these structure provides the multi-scale multi-physics geometry and hence to reduce the computational efforts, one needs suitable data structures to store the information related to flow governing equations. In these cases, graph and trees play their roles.
Hi, I suggest for you to learn SOLIDWORKS software it has all things about fluid flow or fluid dynamics as well as the theory. Also it has simulation app. for all conditions, besides the analysis for it. It is a very good programme.
