You can use gum arabic for edible coating of fruits and vegetables. I have read some papers that studied about gum arabic in mango and tomato to delay the ripening process.

Or you can see the paper about the effect of gum arabic coating combined with calcium chloride on physico-chemical and qualitative properties of mango (Mangifera indica L.) fruit during low temperature storage.
Beside gum arabic, trehalose, vapor gard and carnauba wax are the materials used for coating.
