There are various Saccharomyces strains, which have the capacity to synthesize higher amounts of the bioactive compound melatonin during its growth and alcoholic fermentation (e.g., wine making process or in different growth media).
Many species produces melatonin and other indole-derivative compounds, i.e. Chaga (Inonotus obliquus) and many polypore species from family Hymenochaetaceae, like willow bracket (Phellinus igniarius), Tropicoporus (Phellinus) linteus, Sanghuangporus sanghuang, S. baumii, S. vaninii etc.
