Any "green" solvent to replace naphtha or kerosene in solubilizing ethylene-copolymers, maleic ester copolymers and phenolic resins? The solvent shoud not compete with food sources for sustainability.

Yes water alone cannot dissolve the mentioned copolymers & resins but it is worth it to try a mixed (water-X) solvent where X is also greenish & I think of ethanol or acetic acid as (X) in a percentage determined by experiments. All of this has to be done when there is need to avoid "expensive" green solvents.
Carbonic esters, such as DMC, dimethyl carbonate (CH3OCOOCH3) are considered a new class of “green” solvents in many organic reaction processes. They can replace methychlorides and dimethyl sulphate esters which are toxic and hazardous.
Try propylene carbonate. Miscible with phenolic resole. Can even use PG to "compatibilze" resole with an aqueous component if not too much.
