I have a dependent variable ( growth in proportions) with two continuous independent variables (temperature and moisture) measured over 10 days (with day being the third independent variable). What kind of analysis would suit my analysis? I am not sure if the day can be included in the regression? Or whether I should do a time-series data analysis?

Both approaches proposed by you are possible as long as they both focus on finding the relationship between the variables included in your study.

You have not specified whether your sample is one subject or multiple subjects and the size of your sample. You only mentioned the time (t= 10 days). However, you may generally start with some bivariate tests and then use OLS regression. Note that there is no problem to include days as an indicator variable in your regression to control for the changes due to the normal passage of time. If you have multiple subjects, you would need to consider panel-data regression.
