I am aware that eutectic solvents compared to ILs are less toxic overall. I am interested to know if this was your main reason to choose them or was this the only way this could be targetted and achieved.
This is obviously one reason. There is other reasons too. Main reason is: ionic liquids are ionic. So, these generally can not solubilize hydrophobic solute. This is a big drawback of ILS from practical point of view. But, eutectic solvents could be non-ionic also (like menthol based ones or urea-acetamide) and can solubilize hydrophobic solutes also. Secondly, compared to IL preparation, des preparation is easier. Thirdly, in IL, solvent property can be finely tuned by carefully choosing the constituents. In case of DES, one can fine-tune the property of the solvent not only by changing the constituents; but also by changing their mole fractions.
