I am trying to measure Zeta potential of a flat surface. It would be fantastic to have a material, which is very thin (not more than half a millimeter thick), and having a high conductivity along the thin axis, and very low conductivity along the other two axes. Do these materials exist?
If you are talking about field depended anisotropy in which electrical conductivity in one direction changes with E-field,and other tensor quantities still remain same then CNT/Polymer composites are the right choice as per your demand.

There are a number of such materials, nanotubes being one, as Sajib mentioned above. Another fine example is virtually the entire class of conjugated polymers (often referred to as "1D metals" due to their anisotropic conductivity). Although I would recommend soluble conjugated polymers (e.g. poly(3-alkylthiophenes) due to their easy processing from solution), even insoluble conjugated polymer films can show this conductivity anisotropy, such as mentioned in this works:

One thing that may interest you is that for conjugated polymer films a 0.5mm coating can be considered "very thick", as layers for most applications are typically thinner than 1 micrometer.
