The battery charges rapidly to 7 V, after a sec of constant current charge. Though the upper voltage window of the battery is set to charge to 4.3 V only. After few seconds it discharges to -7V, though the lower voltage window was set to 3V. What might be the possible cause for this unusual charge/discharge profile? See the attached figure for the reference.

Likely you have no a good contact between your electrodes and the separator. Try to shake the coin cell and check if you hear some noise about your electrodes jumping up and down.
Maybe, there is an electrical (and/or mechanical ?) contacts' issue inside[1] the button cells[2].
So, either
1) you add, carefully, one (more) drop of the electrolyte, if the cell is (near to be) "dry";
and/or
2) add, carefully, an additional spacer[3] and/or replace the springs[3] inside the button-coin cell; thus you ensure, that there is no mechanical contacts' issue, and it will not, risk to, fail the test, in a step, during full (and multiple cell's) testing phase.
1. In order to avoid any (in-)possible external to the button cells contact/cable issue(s), remake a similar test(s) using an old good (or dummy) cell.

i tried with the commercialized cell and tested but the result seems similar with voltage shooting up.
Please find the attached picture of the commercialized test result. It looks similar profile.

so, you must start, now, with some troubleshooting tests for your setup using a dummy cell.
If a dummy cell is not available, now, then you can use a simple R (Resistor/1W) in the (values) range: 10 to 100 Ohms .
Remake the above (or similar) schedule test(s) and, if possible, show the graphs.
