Hi there, we failed to measure Raman spectra of dark products of the Maillard reaction for several times. In fact fluorescence seems to be a problem even when working with 1064 nm. In addition there seems to be a lot of introduced heat. I also did not find any spectra in the literature. Does anyone know a source where Raman spectra were successfully monitored for Melanoidins ?

What you have use as analytical approach - solid state or solution?
Hi, we used both, solid state at room temp and at 77 K, and alo solution in PBS buffer, both room temperature and 77 K

According to the IR spectrum in the shown in your posting paper there should be Raman responce. Accounting for the fact that there is a large set of OH groups in your melanoid (L) you can try SERS using AgI or AuIII metal ions (AgNO3 or HAuCl4 salts are recommendable).
You can try with molar ratio AgI:L = 1:1 in presence of NaOH (You can use the protocol from the paper shown below). Obligatory there should be carried out SERS and IR in parallel (1/2 of the sample SERS and 1/2 of the sample IR).
In addition you should monitor the formation of AgI-complex or Ag0-NPs, because of very frequently a redox process starting from AgI to Ag0 occurs.
