I have quantified my samples by HPLC and 1H NMR and I . The result by HPLC was higher about 10% than by NMR. So my question is , which one I should believe??
It depends on which kind of experiments you performed in NMR and also on the power of the instrument used. Also for HPLC it is important which kind of detector you used. Please provide more details.
Did you tested also a standard solution? for example, if you are investigating flavonoids you may prepare a standard solution of e.g. apigenin at a known concentration and then you may compare the results obtained from the two different analysis(NMR and HPLC). So you may evaluate what is the best method.
